What you'll do
Let's cook together! We will go through the whole process and will cook the best mole you will ever taste!
“Manchamanteles” Mole is a fruity mole sauce that originates from the Mexican state of Puebla. This versatile sauce can be served over pork loin, chicken, quesadillas, enchiladas or any dish of your choice. In our class, we will try adding mole to a Quesadilla, and then you can use the mole however you wish and have a creation of your own.
Mole can be a very complicated dish to prepare, and there are many ways to do it, but the Manchamantel Mole from Puebla can be the most desirable for this experience because it's an easy one to prepare, yet sophisticated enough to make it a great one.
This will be an interactive experience where you will learn how to prepare the Mole, ask as many questions as you have, and interact with other people doing the same thing to see who can make the very best mole. This is perfect for lunch or for dinner!

I am a Mexican chef and love what I do! I love cooking delicious meals from my grandma's recipes. She was the best cook I have ever met, and I love to play around with that and find my very own creations. Her favorite dish is the mole, a very exotic Mexican sauce that can accompany many different dishes.
What to bring
50-100 grams Dried ancho chili peppers (Or any whole dry chili. Chili powder is different and much spicier)
50-100 grams Dried guajillo chili peppers (Or any whole dry chili. Chili powder is different and much spicier)
5-6 pieces of Roma or Plum tomatoes (Substitute any other type)
1/4th White onion (Substitute any other type)
3 cloves of garlic
3 bananas (2 bananas for the sauce, 1 banana to fry and serve on top)
3 apples
1/4th Fresh pineapple or canned
1/4th Cup Vegetable Oil (Substitute pork lard)
2 Tablespoons Sugar
1-2 Cups Water
1 Tablespoon Salt
1 Teaspoon Black Pepper
8-10 Corn Tortillas (Substitute Flour Tortillas) for Quesadillas
200 grams Oaxaca cheese (Substitute any soft white cheese or Mexican blend) for Quesadillas
Cookware: Blender, Cutting Board, Chopping Knife, Vegetable Peeler, Spatula, Frying Pan (or Skillet)…
Optional Variations: You can serve this sauce over pork, beef, chicken or any protein of your choice.

**Prior to blending, soften the peppers by soaking them in water overnight or in hot water for 10-15 minutes. Drain and remove all stems & seeds
