What you'll do
Together we will make seared salmon over mashed sweet potatoes with a homemade salsa.
First, we'll wash and prep the vegetables and fish.
Then we'll prepare our salsa while the sweet potatoes cook.
We will then cook the fish, and I'll show you tips to find the perfect heat, technique, and timing, depending on size.
Then we will plate everything!
While we're cooking, I will share some of my Olympic stories and my thoughts on nutrition, plus answer any of your questions.

And as the owner and Chef of a popular New York restaurant, I have a very unique perspective on healthy clean cuisine. From basic weekly food prep to restaurant style dinner parties, I will show you how to apply my Olympic diet principles to your every day life. This class will focus on one of my all time favorite meals, which is easy to make from home.

sweetest tomatoes you can find - many species work for this recipe, I prefer any kind of heirloom
fresh cilantro - 1 bundle, fresh basil also works
sweet white onion - (Maui or Vidalia) 1 medium sized or 1 medium sized red onion also works
lemon - 1 ripe
sea salt - a high quality fine grained sea salt or large flake Maldon
