I highly recommend this class! You arrive at Sonia’s beautiful property and are greeted with coffee or tea and some delicious items to eat, along with a wonderful introduction to the class by her son, Baldo. He is extremely knowledgeable and walks you through every step of the class, the food and the history. You also get to sample quesillo made in their family for generations. Then you start cooking, and it is very hands on — pressing dough and cooking empanadas, grinding ingredients, making salsas, etc. And you learn about the ingredients every step of the way. They offer mezcal, beer, sodas throughout and you all sit down to eat what you made. You also get courses of their moles. It’s so much fun and very filling! I recommend going at the start of your trip so you can meet other travelers and get recommendations on things to do for the rest of your trip. Thank you Baldo and Sonia for your hospitality!
