After picking you up from Sydney in our mini bus, we drive to my hometown of Glenbrook to grab a coffee together at a cool local cafe. Before heading into the local National Park for amazing lookouts. We will take you on a moderate/hard 90min bushwalk via some amazing view points, small waterfalls to the base of a big waterfall in Jamison Valley. The hardest part is optional to skip. We provide a social picnic lunch (refer to picture) where we all connect. BYO beers/drinks are fine (grab beers at the 930am cafe stop). After lunch we stop by the famous Three Sisters Rock formations as well as Lincolns rock. Many other stops too. We try to show you guys as much as possible. We're going to discover the underwater world by floating above the marine sanctuary in Manly which is full of life and colours :) I'll be by your side the entire time to make sure you feel safe and comfortable as we observe all the beautiful marine species in our reserve I will identify the different species you'll see and take high resolution underwater photos (additional cost) so that you can focus on enjoying the Experience The bay is a marine sanctuary which means ecosystem is working perfectly and marine life won’t scare you, I'll also teach you to respect it Once you have booked your preferred day and time I will check the weather forecast, tide, swell and wind conditions. With a like-minded group of explorers, you’ll travel by scenic train from Sydney's CBD to tackle a full-day trek through the Blue Mountains wilderness. You’ll explore lush forests, waterfalls and stunning vistas with incredible views of the Eucalypt​-filled valleys below before climbing 300m/1000ft (over 800 steps in total!) to emerge right beneath the Three Sisters themselves. People travel from all over the world to view the sisters from Echo Point's viewing platform - but this experience is for those with a true sense of adventure, who want to get off the beaten path and into the wilderness. Over the course of the day, you'll be walking 14 km (9 miles). But don't worry about keeping up with the pace. There will be plenty of time to soak it all in and share the good vibes of this walk. Kings Cross: once a bourgeois neighbourhood of colonial mansions looking over the harbour, this inner city suburb began to transform into Sydney's late-night playground of vice and entertainment by the the 1920's & '30s. Amidst the bustling bohemian streets & neon lights, razor-wielding gangs lurked in dark alleys and crime-queens Kate Leigh & Tilly Devine battled for underworld supremacy over the sly-grog, dope and sex trade. By the 1960s & '70s, the Golden Mile of Kings Cross buzzed with local & international revellers who flocked to its infamous stretch of nightclubs, strip-shows & go-go bars. Dubbed in the media as Sin City, the growing underbelly of the area only increased as colourful club owners paid off the cops and installed organised criminal empires. By 1975 the neighbourhood was even embroiled in one of Sydney's most scandalous cold-case murder mysteries. This tour will bring to life the local characters, visiting rock-stars & forgotten flavours the Cross's Golden Age. It will reveal the quirky & glamorous Art Deco street-scapes of Potts Point; discuss the contemporary cafe & club culture; and delve into the controversial history of lust, luxuriance & long-nights that left its mark on so many, for so long.
Fresh Handmade SEAFOOD PASTA with Chef
Journey through traditional pasta making with innovative techniques. Together we'll prepare and cook traditional Mediterranean pasta recipes, adapting them to our modern way of eating. The result is a delicious pasta-based dish with Australian Fresh Seafood that is sourced across the country: from NSW to WA, from VIC to South Australia as well as Fresh Water Seafood; depending on market and season availability. This 3 hours Experience will get you involved in making your own Pasta from scratch, understanding the value and sustainability of produce we will be using. I will be sourcing local Australian produce along side with some great Extra Virgin Olive Oils. Produce are changed seasonally so we can get the best and freshest every time. Learn how to prepare a great Seafood Pasta Platter ! I will share tips and tricks of the trade and you will get first hand experience making pasta dough, rolling tagliatelle and preparing a delicious feast with wonderfully, fresh local produce. "The fresher the better" moto will be reflected onto our dishes, which we will enjoy over the course of this experience. Make Vietnamese food with a chef
We'll meet for some banh mi (a Vietnamese sandwich) and Vietnamese coffee or fruit shakes at Marrickville Pork Roll—a counter-service cafe. Then we'll visit an Asian grocery to shop for ingredients to make beef or chicken pho (noodle soup) and fresh rice paper rolls. We'll go back to my place to cook. You'll be involved in every stage of the preparation and cooking process. After we're done cooking, we'll sit down to enjoy our lunch. I'll send you home with recipes so you can recreate these dishes at home. Other things to note Bring a shopping bag, pen and notebook, camera, cooler bag, and empty stomach.
Juggler canyon May to August
Juggler canyon is the winter equivalent of Empress canyon https://www.airbnb.com.au/experiences/146252 We will spend the morning abseiling from 5 metres to 30 metres. After lunch (which is included) we will visit Juggler Canyon, a real gem among the Blue Mountains canyons. With relatively easy access, it provides an amazing canyoning experience. We will travel to the Grose Valley, north of Katoomba. A short walk will take us to the first of five abseils up to 20 metres high. The canyon is narrow, steep, and spectacular. A 45-minute walk with stunning views brings us back to the car. Other things to note Dress for the weather, and wear running or hiking shoes. Bring water and a camera. Glow-worm tour and Spotlighting
Age 7 and up. Good mobility needed! An unforgettable, educational experience visiting the unique glow worms after a short walk through World Heritage listed forest and rainforest. We will meet at sunset, spending a little time introducing ourselves and safety briefing. Then as the stars begin to appear, with the use of torches, we begin our 20 minute walk to the overhanging cave and waterfall, with the possibility of seeing our amazing nocturnal wildlife. Possums, gliders, owls and bats to name just a few. Another truly amazing encounter, only within the first 3 weeks of summer is the chance of fireflies. We will spend 30 minutes to an hour in the overhang, behind the waterfall learning about these incredible glowing larvae and why they glow. The track is mostly in good condition, though there are some stairs and heavily eroded sections therefore a medium fitness level is required. Glow worms are extremely sensitive to light and sound so we will ask our clients to respect this and there will be a 5 minute educational talk around this before entering the cave. Smoking is strictly prohibited on the tour. Torches are supplied for everyone on this experience. Minimal impact is very high on our list of priorities and instructions will be given on how to achieve this. We ask our clients to adhere to these rules.

Get up close and personal with the gorgeous rescued farm animals of the sanctuary. The tour involves meeting the animals, hearing their stories and feeding them some treats. Next we take an easy walk over to meet the gentle cows who will most likely be relaxing in their paddocks still digesting breakfast. After some cow cuddles it is off to meet the pigs, Sunday, Ivy and Boston. Be prepared for a muddy smoosh from Boston, if you do prefer to keep mud free though we can help with that ;) During the tour you are welcome to interact with the animals if they are willing however please be aware we are not a "Petting zoo".

Meet 1000 Flying Foxes Ozzies largest Bat
With me you'll observe at close range the Australian FLYING FOX....they will be flying, screeching, fighting and sleeping. What is this creature you ask?? It is the the largest and only endemic bat species to Australia with wings that can span over 1 meter! This experience will offer you a real encounter with Australia's wildlife off-the-beaten track. A trip like no other in the city! I will pick you up near circular quay and head to the local park where the bat colony resides. There you can use my high-zoom camera if you don't have your own, to capture amazing close-ups of this fruit bat. I will send you your personally taken photographs at the end of the day to keep as mementos. Fun Fact: Grey-headed flying foxes are the only species covered in fur from head to toe! This is a fantastic way to see the main highlights of the harbour in a short amount of time - without having to share a boat with hundreds of others or listen to pre-recorded commentary. Welcome Autumn, my fave time of the year to snorkel! We're going to discover the underwater world by floating above the marine sanctuary in Manly which is full of life and colours. I'll be by your side the entire time to make sure you feel safe and comfortable as we observe all the beautiful marine species. I will identify the different fish you'll see and will take high resolution underwater photos (additional cost) so that you can focus on enjoying the Experience! The bay is a marine sanctuary which means ecosystem is working perfectly and marine life won’t scare you, I'll also teach you to respect it. Once you have booked your preferred day and time I will check the weather forecast, tide, swell and wind conditions.
